Sauvignon Friuli Grave DOC

Like the gravelly Graves region of Bordeaux, Grave del Friuli owes its name to the gravel in the subsoil, which forces the roots of the vine to grow deep into the earth in search of water. As the vine struggles, its fruit grows richer, resulting in full, well-structured wine with remarkable minerality. The grapes for all of Pighin’s wines are handpicked and pressed in state-of-the-art pneumatic presses. Select grapes of optimum ripeness are gently pressed immediately after harvest and undergo a 14- to 18-day cold-temperature fermentation in stainless steel tanks. As there is no malolactic fermentation or oak aging, the finished product is a beautifully pure expression of Sauvignon Blanc grapes.

The wine shows intense and persistent aromas of tomato leaves, with notes of wild green peppers and elderflower. In the mouth, the wine has elegant, fresh and full flavors, and excellent length on the palate.
Will pair well with vegetable soups--especially cream-based soups--soufflés and dishes with eggs and asparagus. Also excellent with salami.

Sauvignon Blanc has vivid, assertive aromas and flavors of gooseberries, citrus, herbs framed by tangy acidity. Oak contact adds tropical fruit, vanilla, lanolin and toast notes.
The climate, cool yet moderated by the proximity of water and the sun's reflective effect on the stony soils, allows a long growing season to ripen the fruit well into autumn.
