Signature Cabernet Sauvignon
/ Paso Robles
This is the first release of the Signature Estate Cabernet Sauvignon. Sealed with the signature of owner Dana Brown, it is built upon Cabernet from the now mature Block 7 which is planted to Clone 15. This block is located between the 2 Syrah blocks on the steepest and chalkiest soils of the entire Estate. Planted in 2002, it took 10 years for these vines to be ready to produce a true expression of their potential.
Wine Advocate2012 vintage
Presents a dark purple hue and emits a heavy bouquet of currants, cocoa and tar from the glass. The Estate Cab displays immense density on the palate, filling the mouth with dark brambleberry fruit, and more earthy notes of rock and mushroom. The extended barrel aging perfectly integrate round oak tannins into the wine which combine with stunning natural acidity to create of lasting finish.
Pairs well with New York Strip Steak, Pork Tenderloin or Lamb Dishes

about the grape +
Cabernet Franc usually shows tart red cherry and wild currant aromas and flavors with an herbal, spicy character. In the Loire, esp. Chinon and Saumur-Champigny, this grape shows firm minerality.
Cabernet Sauvignon is adaptable to various growing conditions, and is known for its low yield and late ripeness. It generally produces full-bodied wines with substantial acidity and tannins.
Well-made Malbec is a dark, perfumed wine with rich, blackberry and damson plum fruit, aromas of violets and tobacco, and ripe, juicy tannins. In France, may be mineral, structured and austere.
